Hi Justin, great question about what type of plums are in the Forest Farmstead Organic Umeboshi Plums. Per the food producer, the plums are a Japanese Plum that has gone feral in the forest that are picked when it's only just barely starting to ripen. The plums are still "green" but has started to put on a purple blush color on the exterior skin of the plums.
